Abstract
Erythrina edulis is a leguminous tree (Fabaceae) found mainly in western Venezuela. Its use has been directed to supplement the diet of ruminants, horses, and pigs, among other grazing animals. However, in recent years its potential nutritional properties have favored its use in human nutrition, finding a diversity of options in which it can be consumed. This paper uses official analysis and research methodologies to show the physical characterization of Venezuelan chachafruto pods and grains. Likewise, its potential to convert it into flour and protein isolate, evaluating their nutritional properties.
