Microgreens: A Critical Review on Physiology and Bioactive Compounds in Soybean Seeds

Abstract
Present literature study is an overview of growth, mineral content, health benefits, bioactive compounds and antioxidant potential of one the best superfoods which is called as “microgreens”. These microgreens are also known as “functional food”. Throughout the world these microgreens are now becoming popular food with respect to its colour, palatability and small size. Over the period increase in the demand of food in the world has caused maximum utilization of land for the agriculture practices. This is also causing enormous amount of use of fertilizers and synthetic insecticides, pesticides. To avoid the use of these excess amount of chemicals and to control the soil and water pollution alternative method is to take microgreen production. These plants can easily grow in less amount of space and without any use of fertilizers. In urban as well as suburb areas microgreens can be grown by the horticulturist or consumer itself. This kind of practice gives security about nutrient rich food.
