Prof. Dr. Mario Ciampolini have two Children from Vanna Pastacaldi: Iacopo, orthopedic surgeon, director of a hospital in Sommerset (UK) and Lorenzo, PhD in electronic engineering, currently in the management of ST Microelectronics (Grenoble, FR). I made humanistic studies during the first 7 years after graduation and wrote two Italian books: Human differences and a study on Renassaince. Human differences almost coincides with a relation of Cabanac (Laval University) to the SSIB meeting at Mc Master University, Hamilton 1994. I (born 1933) directed the Gastroenterology Research Unit, a third level referral center in the department of Pediatrics of the University of Florence (Meyer hospital) from 1965 to 2000. In Tuscany I first diagnosed celiac disease by the Watson capsule. I worked at the Cornell University for a joined research with the University of Florence on energy expenditure in children. A long term strategy was designed with Giuliano Parrini, prof. of Physics (Firenze, It), Andrea Giommi, prof. of Statistics (Firenze, It), and Cutberto Garza, Boston College, Rector. Three students came from Amsterdam Medical Center to learn “Initial Hunger (IH)”. The Unit published 150 scientific articles, more than 50 in international Press.Main achievements: Hunger can be taught; and an Initial Hunger Meal Pattern can be constructed (IHMP = Three IH arousals per day). IHMP decreases energy intake, mean preprandial BG, body weight, insulin resistance and fecal energy loss. The sequence of 21 preprandial BG measurements in a week (Mean BG) is stable and comparable through months in the single individual and stratified in population.

His postdoctoral studies were done at Lund University in Sweden. Prof. Labban finished his M.Sc from University of Newcastle upon Tyne in England. He has been a professor of clinical nutrition at TeSham Academy since 2016. Before that he taught at A’Sharqiyah University in the Sultanate of Oman and before that, he taught different nutrition courses in several universities in the USA in addition, he also worked for well-known pharmaceutical companies as a head of nutrition assessment team studying the effect of newly developed medications on the nutritional status of patients. Dr. Chee Kong YAP is an academician for more than 14 years in UPM and 19 years as a researcher, He has supervised more than 71 undergraduates and 30 postgraduate students (as a Chairman and Member of Supervisory Committee) in the fields of ecotoxicology, environmental biology, environmental sciences, water quality and ecotoxicological genetics. His research area is mainly focused on biomonitoring and monitoring of inorganic pollutants (heavy metals) in the aquatic environment using mollusks and sediments. Dr. Zuraini Mat Issa is an Associate Professor in the Department of Foodservice Management at Faculty of Hotel and Tourism Management, Universiti Teknologi MARA, Kampus Puncak Alam, Selangor, Malaysia. She obtained Bachelor of Science (hons.) in Agriculture and Food Science specializing in Food Science at University of Nottingham, United Kingdom and a Master of Science in Food Microbiology at Universiti Putra Malaysia, Malaysia. She earned Ph.D. in Nutrition Programme/Policy at Universiti Sains Malaysia, Malaysia. She has over 15 years of experience in teaching and research in food safety, nutrition, food science and food toxicology. She has been awarded Excellent Service Awards twice by the Universiti Teknologi MARA in 2007 and 2011

Dr. Helena M. Moreno is currently working as researcher at the Institute of Food Science Technology and Nutrition and served as Associate Professor at the Veterinary Faculty, both in Madrid (Spain). She is graduated in Veterinary Science (2001) and in Food Science Technology (2004). Since 2009 she is European PhD on Veterinary Science. Dr. Swapnil Rai did his Ph.D. in Environmental Science on the topic of pesticide accumulation in all the components of environment and in humans from National Institute of Malaria Research and Gurukul Kangri University, Haridwar, Uttarakhand. He joined Mangalayatan University in 2008, presently he is working as Assistant Professor of Environmental Science in Amity University Madhya Pradesh, Gwalior, India. Dr. Rai worked on pesticide levels in soil, water, sediments, snow, fish, earthworm, food items and human blood and milk in Himalayan region of India. Shahjada Selim did MBBS degree from Rajshahi Medical College, Bangladesh; MD (Endocrinology & Metabolism), BIRDEM Academy under Dhaka University. He has been awarded with FACE in 2016 by ACE and FRSM in 2018 by RSM. He is the organizing secretary of Bangladesh Endocrine Society (BES) and Coordinator of 1st BES-MAYO Advanced Course in Endocrinology 2019. He is now working as assistant professor in the department of endocrinology, Bangabandhu Sheikh Mujib Medical University, Dhaka, Bangladesh.

Dr Selim has keen interest in clinical research in diabetes & its complications, prevention of diabetes, obesity, osteoporosis and sexual dysfunctions. He had completed B. Tech. (Dairy Technology) from College of Dairy Technology, under Indira Gandhi Agricultural University-Raipur, Chhattisgarh (India). Dr. Shaik Abdul Hussain is currently working as Scientist at Dairy Technology Division, ICAR-NDRI, Karnal. He has obtained his B.Tech. (Dairy Technology) degree from Osmania University, Kamareddy, Telangana and Master’s & Doctoral degrees (Dairy Technology) from ICAR-NDRI, Karnal. Dr. Marco Iammarino is a Food Technologist and Chemical Surveyor. Since 2002, he is a Researcher of Istituto Zooprofilattico Sperimentale della Puglia e della Basilicata (IZS-PB) of Foggia (Italy). Currently, he is employed as Principal Investigator at National Reference Centre for Detection of Radioactivity in Feed and Foodstuff of IZS-PB. He deals about food quality and safety, analytical chemistry applied to food analysis, research & development and analytical methods validation. In particular, he has developed several analytical methods (HPLC, HPIC, CE, LSC, TLC, ELISA) for the determinations of food additives (nitrites, nitrates, sulphites, polyphosphates, organic acids, etc.), radionuclides, mycotoxins, pesticides and drug residues in foods and feed materials. He has published more than 100 articles in peer-reviewed and Academic Journals, Congress Proceedings and books. Dr. Silvia Di Giacomo received her degree in Pharmacy in 2009 and the title of "PhD in Toxicology" in 2014 at Sapienza University of Rome. Here she worked as Postdoctoral Fellow from 2014 at present. Along these years, she carried out two research period abroad: from November 2012 to May 2013 at the Institute of Pharmacy and Molecular Biotechnology of Heidelberg University (Germany), while from February 2016 to July 2016 at the Department of Physiology and Pharmacology of Salamanca University (Spain). She collaborated to various research projects (2011-2015) and in 2016 she obtained a University grant as a Principal Investigator.

Dr. Silvia Di Giacomo main research interest is to evaluate the possible inhibition by natural substances of the efflux pumps (ABC transporters) involved in multidrug resistance and of the pathways related in their overexpression in cancer cells. Dr Ramana Sundara, PhD (Food Science), MSc (Food Technology), MA (Management), PGCE, BSc (Agriculture) is specialised in agri-food technologies and sustainable nutrition. He is a Fellow and Chartered Scientist of the Institute of Food Science and Technology (UK). Dr Ramana Sundara is a Programme Leader in Agri-food Technology based at the Lincoln Institute for Agri-Food Technology, University of Lincoln. He has been actively involved in food research for over 25 years. His early research work at the Defence Food Research Laboratory (India) was to develop quick cooking and survival rations for Armed Forces. He then worked at the Federal Research Centre for Nutrition, Karlsruhe (Germany) as an Alexander von Humboldt Post-doctoral Research Fellow. Dr Sundara then joined as a Research Scientist at Nestlé Research Centre, Lausanne (Switzerland) in 1995. He subsequently worked as a Group Leader for Confectionery at Nestlé Product Technology Centre, York (Nestle PTC), and responsible for developing and launching new products in various countries. In addition, he also led the External Research Collaborations portfolio at Nestle PTC including the supervision of PhD studentships. He secured around £2m funding from BBSRC, EPSRC, Innovate UK and successfully managed multi-disciplinary projects. He has authored over 50 scientific papers and 6 patents, with an emphasis on chemistry and processing technology of fruits / vegetables, dairy and chocolate products

His thesis titles in MSc and Ph.D. degrees are: 1) The relationship between diet quality and life quality in adults. 2) Effect of New Zealand blackcurrant extract on walking-induced whole-body fat oxidation in males. He works as a research assistant at Department of Nutrition and Dietetics, Hacettepe University. He had a two project with the collaboration of University of Chichester and Hacettepe University. The project titles are: 1) Effect of New Zealand blackcurrant extract on substrate oxidation and cycling performance in normobaric hypoxia. 2) Effect of Matcha green tea drinks on fat oxidation during brisk walking in females.

Dr. Alessia Cavaliere was born in 1983. She received her PhD in Agricultural Economics (Doctoral Schools in Innovation technology for agro-food and environmental sciences) at the University of Milan in 2010. At present she is Assistant professor in Agriculture and Food Economics at the Department of Environmental Science and Policy of the University of Milan. She accomplished several teaching activities and has been the supervisor of several students for their theses. At present, she teaches at the University of Milan several classes, namely, ‘Food Economics and European Legislation’, ‘Food Economics and Policy’, and ‘Economics and Innovation in the Food Industry’ for the Master degree in ‘Human Nutrition and Food Science’ and Master degree in ‘Food Science and Technology’. During the PhD she has been visiting researcher at the ‘Centre de recerca en economia i desenvolupament agroalimentari’ CREDA UPC-IRTA of Barcelona (Spain). She presented several works at national and international congresses and she participated as researcher to numerous national and international research projects, among which: Long Life, High Sustainability - Shelf Life Extension as tool of sustainability; CAPINFOOD - Improving the enabling environment and public awareness for innovation in the South-East-European food sector through transnational collaborative’; TRUEFOOD - Traditional United Europe Food’; MOSE4AGROFOOD - Mobile Services for Agro Food’. Dr. Francesco Bimbo holds a Ph.D. from Wageningen University (The Netherlands) and he is currently appointed as a post-doc researcher at University of Foggia (Italy). He received a rigorous training in empirical industrial organization and food marketing during his Ph.D. at Wageningen University as well as during his research experiences in the many institutions during his career at Penn State University (USA) and University of Naples Federico II (Italy). His background also includes a mix of food science and business management acquired during the many vocational periods.The research interests in which Dr. Bimbo is currently .Additionally, he has well-documented records of publications on top published journals in the field of the agricultural economics as well as he has well-documented teaching records in Corporate Finance Management and Business and Finance Management at Wageningen University. Further, he is currently involved in several research projects in collaboration with many European Institutions.involved are two: the first research area is about the organization and the economy of the food-supply chains, with a focus on short food-supply chains. The second area of research is on the economics of credence attributes on food products. Such subjects are explored from different angles, using multiple types of data (e.g., market data, survey data and data collected through the use of virtual simulated reality), data are then analyzed through the use of empirical econometrics approaches.

Dr Thaisa M Cantu-Jungles is a Post-doctoral researcher in the Depatment of Biochemistry and Moleular Biology at Universidade Federal do Paraná, Brazil. She obtained her Bachelor in Nutrition at Pontificia Universidade Católica do Paraná, Brazil. She has earned her master and Ph.D. in Biochemistry at Universidade Federal do Paraná, Brazil with part of her Ph.D. research conducted in the Department of Food Science at Purdue University, USA. She is currently working in the area of structural characterization of carbohydrates from fruits and its applications in the biological field, especially as prebiotic agents. She was awarded by Elsevier best poster prize at the European Polysaccharide Network of Excellence (EPNOE) in 2013 and best oral presentation at the XXV Brazilian Congress of Food Science and Technology (CBCTA) in conjunction with the 10th International Food Symposium of CIGR (International Commission on Agricultural and Food Engineering) in 2016. She has authored several research papers and book chapters.

Dr Thaisa M Cantu-Jungles research interest includes in vitro fermentation models that mimic fermentation in the human gut, prebiotics, biological activities of dietary fibers and the elucidation chemical structure of carbohydrates from diverse sources.

Dr. Jeanette Balindong obtained her BSc degree in Agriculture from the University of the Philippines at Los Baños (UPLB) in 2005, and passed the licensure examination for Agriculture at the same year. She started her research career as a plant pathologist at Marsman-Drysdale Biotech and Research Corporation, Davao del Norte Philippines, and then became a research technician at the International Rice Research Institute (IRRI). Jeanette has various achievements during her tenure at IRRI. She was promoted as a researcher, received a full scholarship from the Rockefeller Golden Rice Project, obtained her MSc degree in Genetics in the UPLB and was hired back as assistant scientist by the institute. Jeanette gained deeper knowledge and practical experiences from working on various projects at IRRI dealing with drought resistance and rice biofortification using lysine, ferritin and iron-transporter genes as well as golden rice. She performed construction of overexpression vectors, gene silencing, DNA sequencing and tissue culture work. Jeanette's research interest has revolved around understanding and managing the different components of plant foods. Within this sphere, her research has encompassed increasing and diverse range of activities. Recently, she worked on rice grain proteins and its role in eating quality and grain breakage as her PhD project. Her research project involves identification of an improved extraction method and use of high performance liquid chromatography to characterise rice proteins, investigation of the relationship between rice grain protein composition and instrumental measures of rice cooking and eating quality, identification of the influence of the rice grain protein composition on HRY and determination whether nitrogen fertilisation impacts on the protein composition, and consequently HRY, in a subset of Australian rice genotypes. She has hands-on experience on molecular biology and analytical chemistry techniques used in plant science, specifically in the field of rice research. Jeanette is currently completing (or addressing minor comments from her examiners and preparing the final copy of her PhD thesis) a PhD degree in Plant Science at Southern Cross University (SCU), Lismore, NSW Australia and was offered an analytical officer position by Analytical Research Laboratory at SCU

During 1991 to 1995, he worked as a Post-Doctoral Scientist at the Hypertension Research Center of the University of Medicine and Dentistry of New Jersey (UMDNJ), Newark, USA on “Cell signaling & Molecular Medicine aspects with special reference to diabetes’. During 1996-99, he served as a faculty at the Center for Biotechnology, Anna University, Chennai. He joined the Madras Diabetes Research Foundation in 1999 and instrumental in many of its academic developments including infrastructure capacity building for basic/clinical sciences and translational studies. He has over 115 original research publications and many awards to his credit. He edited a few special volumes on recent trends in diabetes research in Current Science as well as Indian Journal of Medical Research. Food Safety and Microbiology: He has been interested in methods to control, prevent or eliminate pathogenic bacteria associated with food products. He has been interested in developing a research program that centers in the contribution of microorganisms to the safety and quality of food. Research is underway to evaluate the effectiveness of non-thermal process such as ozone in combination with natural ingredients such as organic acids and antioxidants to improve the microbiological quality and reduce the risk of foodborne pathogens in fresh produce. His ultimate goal of my research program is to improve the quality, nutritional values and safety of food products. Food Bioprocess Technology: He has been working with the Department of Bio-system Engineering on the use of bioreactor for the production of food grade products such as organic acids, antimicrobial compounds, amino acids and vitamins using lactic acid bacteria and bifidobacteria. Food Fermentation and Biotechnology: He is manily interested in the impact of probiotic on human health. He would like to use proteomic approach to understand the global changes in protein expression of bifidobacteria and Lactobacillus. His initial observation has shown that these cultures induce a number of proteins when exposed to different growth conditions that have major impact on their functionality as probiotics. This approach would help to better understand how probiotic cultures as functional foods could influence the gut health and eventually human health.
