Prof. Dr. Gabriela Cristina Chire-Fajardo, is working as researcher and associate professor of the Universidad Nacional Agraria La Molina (UNALM), Facultad de Industrias Alimentarias (FIAL), Departamento de Ingeniería de Alimentos (Peru). She graduated as a Food Engineer and Educator, also PhD in Nutrition and Magister in Food Science. 25-years of experience in cocoa and chocolate area, strong training in research and development of new products. Member of the technical committee for the standardization of cocoa and chocolate at INACAL (Peru). Reviewer of research articles in indexed scientific journals. Languages: English - Spanish – Portuguese.
