Dr. Cecilia Eugenia Martínez-Sánchez is Professor-Researcher at the Department of Chemical Engineering and Biochemistry of the National Technological Institute of Mexico/Technological Institute of Tuxtepec. She obtained a Bachelor's Degree in Chemical Pharmacy Biologist from the Universidad Veracruzana in Mexico and a Master's Degree in Food Sciences from the Technological Institute of Veracruz in Mexico. She obtained her Ph.D. in Food Sciences at the UNIDA-Technological Institute of Veracruz, México. She belongs to the National System of Researchers of Mexico since 2002, currently with recognition level I in the period 2018-2021. Dr. Martinez teaches in the career of Biochemical Engineering and the Master in Food Science at Technological Institute of Tuxtepec. She is a member of the editorial board of 2 international journals.

Prof. Dr. Cecilia Eugenia Martínez-Sánchez is interested in fields of research are Edible oils and fats, structured lipids and bioactive compounds. Her current research focuses on the extraction of bioactive compounds through the use of pressurized liquids, as well as the bioaccessibility and bioavailability of these compounds in vitro and in vivo.
