Dr. Cathrine Chidewe, a senior lecturer in the Department of Biochemistry, Univesity of Zimbabwe, is a biochemist, who holds a Doctor of Philosophy degree in nutritional biochemistry from the University of Zimbabwe. Her research interests are in natural products, working with food plants and insects that have health promoting effects. She also has experience in the characterisation of polysaccharides. She has research interests in food safety and currently working on a project involving the analysis of aflatoxin and fumonisin levels in maize, legumes and in biological materials of exposed populations from some rural communities of Zimbabwe.
Characterisation of medicinal properties of edible plants and insects; Characterisation of antinutrients and bioactive compounds in wild plant foods of Zimbabwe, wild vegetables, legumes and edible insects; Analysis of polysaccharides isolated from plants and their functional properties; Analysis of aflatoxin levels in cereal grains and in biological samples of exposed populations from some rural areas of Zimbabwe.
