Dr Thaisa M Cantu-Jungles is a Post-doctoral researcher in the Depatment of Biochemistry and Moleular Biology at Universidade Federal do Paraná, Brazil. She obtained her Bachelor in Nutrition at Pontificia Universidade Católica do Paraná, Brazil. She has earned her master and Ph.D. in Biochemistry at Universidade Federal do Paraná, Brazil with part of her Ph.D. research conducted in the Department of Food Science at Purdue University, USA. She is currently working in the area of structural characterization of carbohydrates from fruits and its applications in the biological field, especially as prebiotic agents. She was awarded by Elsevier best poster prize at the European Polysaccharide Network of Excellence (EPNOE) in 2013 and best oral presentation at the XXV Brazilian Congress of Food Science and Technology (CBCTA) in conjunction with the 10th International Food Symposium of CIGR (International Commission on Agricultural and Food Engineering) in 2016. She has authored several research papers and book chapters.
Dr Thaisa M Cantu-Jungles research interest includes in vitro fermentation models that mimic fermentation in the human gut, prebiotics, biological activities of dietary fibers and the elucidation chemical structure of carbohydrates from diverse sources.
