Meena Goswami Awasthi is working in Department of Livestock Products Technology, College of Veterinary Science and Animal Husbandry, U.P. Pt. Deen Dayal Upadhayaya Pashu Chikitsa Vishwavidyalya euam Gau Anusandhan Sansthan (DUVASU), Mathura, Uttar Pradesh, India. She finished her PhD in Indian Veterinary Research Institute (IVRI), Izatnagar, Bareilly India in 2015, MVSc (Livestock Products Technology) from G.B. Pant University of Agriculture and Technology (GBPUA&T), Pantnagar, India in 2010 and Bachelor of Veterinary Sciences & Animal Husbandry from GBPUA&T), Pantnagar, India in 2008.
Fresh meat technology and meat microbiology is the area of specialization. She has worked on nitrite replacement with various spices, seasonings and condiments. She has developed various value added functional meat products like, health promoting carabeef based cookies, chicken spread, pork snacks, enrobed chicken kababs, low salt chevon sausages etc. She has also worked on meat products specially developed for consumers suffering from various life style diseases like hypertension, obesity, cardio vascular diseases etc. Presently she is working on nano emulsified essential oils incorporated muscle foods.
